Bresaola and Valtellina are, as by tradiction, an inseparable binomial that grant quality and authenticity.
That’s why, since 1998, Bresaola from Valtellina has been recognized by European Community as a product protected by PGI (Protected Geographical Indication) brand.
The Bresaola della Valtellina PGI is obtained by the best part of beef haunch.
The raw materials for production of Lazzeri’s Bresaola come exclusively from one’s natural state breeded cattles.
The meat is precisely selected and trimmed. The processing consists of meat dry salting and massaging; after the salting period it accurs the curing that gives an optimal dessication to the meat, thanks to the dry climate of Valtellina.
Bresaola della Valtellina PGI’s production is controlled by the Consorzio di Tutela according to EEC rules 2081/92 and 1263/96.
