Lazzeri’s Bresaola della Valtellina PGI is very
pleasant to the palate for its delicate taste and its
tenderness; it is lightly aromatic and gently flavouring;
it has an uniform and inviting color. The Bresaola
della Valtellina PGI is a very lean nourishment; its
fats content is absolutely the lower between all cold
cuts products; Bresaola is rich in protein, iron, zinc,
mineral salts and vitamins; it is highly digestible
and therefore it is recommended for diets.
It is ideal as a growth nourishment, for sportsmen in
general and for elderly people.
For its typical taste, the experts prefer relish it
natural or dressed with only a trickle of olive oil;
but it is frequently used for even elaborated gastronomy
prepares.

Bresaola
and Valtellina are, as by tradiction, an inseparable binomial
that grant quality and authenticity.
That’s why, since 1998, Bresaola from Valtellina
has been recognized by European Community as a product
protected by PGI (Protected Geographical Indication) brand.
The Bresaola della Valtellina PGI is obtained by the best
part of beef haunch.
The raw materials for production of Lazzeri’s Bresaola
come exclusively from one’s natural state breeded
cattles.
The meat is precisely selected and trimmed. The processing
consists of meat dry salting and massaging; after the
salting period it accurs the curing that gives an optimal
dessication to the meat, thanks to the dry climate of
Valtellina.
Bresaola della Valtellina PGI’s production is controlled
by the Consorzio di Tutela according to EEC rules 2081/92
and 1263/96. |
